The title may sound a little gimmicky, but the new Belly Fat Diet For Dummies book is anything but. It’s written by dietitian, Erin Palinski-Wade, and it’s chock-full of sound nutritional advice for shrinking dangerous belly fat. Prep time: 10 min Cook time: 30 min Yield: 4 servings
Nonstick cooking spray
2 cups fresh spinach
1 cup chopped mushrooms
1 tablespoon olive oil
1 cup liquid egg whites (or 8 egg whites)
1/2 cup fresh or no-salt-added canned diced tomatoes
1/2 cup part-skim feta cheese
1 Preheat the oven to 375 degrees and spray a 10- x 10-inch glass baking pan with nonstick cooking spray.
2 In a large sauté pan, sauté the spinach and mushrooms in the olive oil until tender.
3 Beat the whole eggs along with liquid egg whites. Pour half the egg mixture into the prepared baking pan.
4 Evenly spread the spinach and mushroom mixture on top of the egg mixture and then top with the diced tomatoes. Sprinkle the feta cheese on top of the tomatoes.
5 Pour the remaining egg mixture on top, covering the cheese and vegetables.
6 Place the baking pan in the oven and cook for 30 minutes, or until a toothpick comes out clean.
Per serving: Calories 172, Fat 10g, Sat fat 3g, Cholesterol 188mg, Sodium 369mg, Carbohydrates 5g, Fiber 1g, Protein 16g.
Tip: I recommend making this recipe on the weekend (or your day off from work), refrigerate it, and then just slice a serving and microwave for a quick breakfast any day. This recipe can stay in the fridge for up to 3-4 days.
