So, it may seem like an uphill battle, but I am optimistic that people like us, those committed to health and out-of-the-box thinking, will also rise up and start to counter this. As a holistic health educator and nutritionist, I know that people are definitely hungry (excuse the pun) to get away from the Western diet trap and culture that has left people overweight, sick and having a poorer quality of life and to start living and eating better. But they need support and education, because of the confusing messages people receive about food.
